Vendakka-thakkali curry( ladies finger-tomato curry)
Recipe by
Ladies finger-15 cut to 1 inch cubes
Tomato-3 cut to cubes
Onion-1 big cut to cubes
Fenugreek powder-1/4 tspn
Oil
Salt
Curry leaves
To roast and grind
Grated coconut-1 cup
Shallots/small onion-5-6 chopped
Garlic-4-5 cloves
Red chilli powder-1 tspn
Coriander powder-1 1/2 tspn
Turmeric powder-1/4 tspn
Oil-1/4 tspn (optional)
Salt
1. Roast together coconut,shallots and garlic till they turn golden brown( don't over roast) Add the masala powders and roast again for few seconds.Add 1/4 oil (optional ).Mix well and remove from fire.Let it cool.
Grind the coconut mixture to a smooth paste by adding enough water.
2. Heat oil in a pan and add the ladies finger and saute till they start changing colour( also the stickiness goes).Then add chopped onions and continue sauting till onion become transparent.
Add chopped tomatoes .Saute well .( no need to make them soft)
Then add the grinded masala,mix well.Add enough water,sprinkle enough salt and curry leaves.
Cover and cook for 5-10 mints till the gravy thickens.
Finally add the fenugreek powder ,mix well and remove from fire.
3. Serve hot with rice/roti
