White chocolate macadamia nut cookies

½ cup old-fashioned oats
2 ¼ cup all-purpose Flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 cup unsalted butter, room temperature
1 cup golden brown sugar
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 bag white chocolate chips
1 cup macadamia nuts, toasted
Prep. Time → 20 min
Cook Time → 15 min
1. Preheat oven to 350 degrees.
2. Put nuts on a baking sheet and put in the oven for 4-5 minutes.
3. Finely chop the oats in food processor. Mix in flour, baking soda, baking powder, and salt and set aside.
4. Using electric mixer, cream the butter and both sugars until light and fluffy. Beat in eggs one at a time and add vanilla extract. Add flour mixture in a little at a time and mix just until blended. Stir in white chocolate chips and nuts.
5. Using a large ice cream scoop, drop cookies onto baking sheet leaving about 2-3 inches between them so they have space to expand. Bake until cookies are golden brown, about 14-16 minutes.
