White wine and honey green beans

2 TBS Olive Oil
1 large Shallot, sliced
1 Garlic Clove, sliced
1 lb fresh, untrimmed Green Beans
Kosher or Sea Salt
Fresh Black Pepper
1/4 cup White Wine
1 TBS Honey
1/4 cup Vegetable Broth

Cook Time → 15 min

1. Blanch and shock green beans:

2. Bring pot of salted water to a roaring boil. Boil green beans for one minute. Drain, or with slotted spoon, place green beans in ice bath until cool.

3. Heat olive oil in a large skillet over medium heat.

4. Add shallot, saute for about a minute or two, or until just browned and wilted.

5. Add garlic, saute for 30 seconds.

6. Add green beans, salt, pepper and saute for another minute or two.

7. Add wine and honey, saute for a minute.

8. Add vegetable broth and let simmer for 3 to 5 minutes or until sauce thickens.

9. Serve.
