Wilson's roasted potatoes

1 lb New Potatoes (white or red)
1 yellow or white onion (sliced)
1/8 cup of extra virgin olive oil
1 teaspoon dried rosemary
1/2 teaspoon of salt
1/2 teaspoon of pepper (ground pepper preferred)

Prep. Time → 10 min

Cook Time → 50-60 min

1. Preheat oven at 400 degrees.

2. Wash potatoes and cut them into 1/8ths.

3. In a bowl combine potatoes, sliced onions, olive oil, rosemary, salt and pepper and toss.

4. Take your baking sheet and cover with foil then spread out the potatoes.

5. Cook for 50-60 minutes. Check continuously at the end to make sure potatoes are cooked completely.
