Yellow split pea soup

350g yellow split peas
1tbsp olive oil
4 rashers streaky bacon, diced
1 large onion diced
1 large carrot, diced
1 garlic clove, minced
1.5 litres chicken stock
1 bouquet garni

Prep. Time → 10 min

Cook Time → 60 minutes plus 8 hours soaking time min

1. 1. Soak peas in plenty of cold water for minimum of 8 hours, preferably overnight.

2. 2. Heat oil in large saucepan over medium heat. Gently cook onions, bacon, garlic and carrots until they start to soften and the onions are translucent.

3. 3. Add split peas, stock and bouquet garni. Bring to the boil and simmer gently for 1 hour.

4. 4. Remove bouquet garni and process until smooth. Season to taste, reheat and serve.
