Yum yum eclairs

80g of flour
50g of butter
A pinch of salt
150ml of luke warm water
2 eggs well-beaten

Prep. Time → about 15 mins min

Cook Time → 20 or so mins min

1. First double sift the flour and salt and set oven to 200 degrees.

2. then melt butter and water, once fully mixed bring to brisk boil.

3. tip in flour and stir like crazy until it all forms a soft ball that completely leaves the sides of the pan.

4. add the egg bit by bit until mixture is soft shiny (sort of) and not too runny or you can't pipe it all to well.

5. grease a baking tray and put mixture into a piping bag and pipe away, pipe about 3-4 inches of the pastry to form an eclair but you can pipe puffs, buns, or what ever you feel like!

6. bake in oven for about 15mins or until just under done then take out, make a slit in each side to dry them out and cook again until golden brown.

7. slice open and fill with cream, then put melted chocolate or icing on top.
