Zucchini Tots of Kimberley Barcus - Recipefy

1 cup zucchini, grated
1 large egg
1/4 medium onion, diced
1/4 cup reduced fat sharp cheddar cheese, grated
1/4 cup seasoned breadcrumbs
salt and pepper to taste
cooking spray

Prep. Time → 10 min

Cook Time → 18 min

1. Preheat oven to 400 degrees. Spray a muffin pan with cooking spray.

2. Grate the zucchini into a clean dish towel. Wring out all excess water. Combine zucchini, and remaining ingredients in a bowl.

3. Divide evenly into pan, pushing down on the top of filling to compact together. Bake for 16-18 minutes, or until tops are golden brown.

4. Use a plastic knife or rubber spatula to remove.
