Curried Lentil Samoosas de Forbidden - Recipefy

1 onion
1 carrot
1 green pepper
1 tsp ground cumin
2 tsps olive oil
one 2cm slice root ginger
1 tbsp soya sauce
50ml water
200g cooked Pouyoukas brown lentils
30 sheets filo pastry
1 egg
200g chopped tomatoes (skinned and seeded)
1 tbsp red curry paste

T. Preparacion → 25 min

T. Cocinado → 20 min

1. peel and chop onion

2. peel carrot

3. remove stalk from pepper and discard seeds

4. dice pepper and carrot

5. peel and grate root ginger

6. heat olive oil and saute onion gently with a pinch of salt and cumin

7. add carrots and pepper and cook until tender

8. add ginger and tomato and allow to cook for about 10min

9. add curry paste and lentils

10. stir and cook for 5 more min

11. remove from heat and leave to cool completely

12. brush 2 sheets of pastry with melted butter and cut into 4-4.5cm strips

13. place teaspoonful of filling on bottom right corner of strip and fold pastry towards left corner to make small triangle

14. fold pastry into trangles until reach end of strip

15. stick ends together with beaten egg

16. fry samoosas in bathces in very hot oil until golden

17. drain on kitchen paper and serve immediately
