Augratin potatoes

8 large potatoes, cook unpeeled, then peel and cube 1/4 cup butter 1/4 cup finely chopped onion 1/4 cup flour 4 cups milk 1 tsp. salt 1/2 tsp. pepper 1/2 lb. cheddar cheese, shredded paprika and parsley for garnish

1. Saute onion in butter, blend in flour then remove from heat. Stir in milk, return to heat to thicken. Stir in salt, pepper, and cheese. Add potatoes to sauce. Bake in casserole for 25 minutes at 350 degrees. Garnish with the paprika and parsley.
