Aunty jean zucchini boats

1 lb lean ground beef
1 large onion
3 cloves minced garlic
1 cup minute rice
2 cups sliced mushrooms
1 cup shredded mozzarella cheese
1/4 cup parmesan cheese
2 large or 4 small zucchini
2 cups tomato sauce

Prep. Time → 10 min

Cook Time → 70 min

1. 1. Cook beef, saute onion, garlic & mushrooms.
2. Cook minute rice and add to meat. Add 2 cups tomato sauce
3. Slice zucchini lengthwise & scoop out seeds. Place in large flat roasting pan. Add 1/2 cup water.
4. Fill zucchini with meat mixture. Mix cheeses together. Cover with tin foil. Place in oven, cook for 1 hour (or til fork tender).
5.Remove foil, add topping of cheese mixture.
6. Return to oven for 5-10 min to melt cheese.

Mom will be very happy to know you've shared her recipe. I must make it soon. I also use acorn squash instead of zucchini.
