Bacon and goat cheese stuffed chicken

2 six oz boneless skinless chicken breast halves.
1.5 oz goat cheese
1 slice cooked and crumbeld bacon.
1/8 tsp salt
1/8 tsp pepper
1 tbsp olive oil

Prep. Time → 10 min

Cook Time → 20 min

1. Preheat oven to 350.

2. Cut a slit into the the thick end of both chicken breast halves, creating a pocket.

3. Combine bacon and goat cheese and stuff evenly into the pocket of each breast. Pinch slit closed securing with wooden toothpicks if necessary.

4. Sprinkle chicken with salt and pepper.

5. Heat and oven proof skillet over med-high heat. Add oil and swirl to coat.

6. Add chicken to pan and cook 4 minutes.

7. Turn chicken over. Place pan in oven and backe for 12 minutes.

8. Let stand 5 minutes before serving.
