Bailey's marble cheesecake

Crust
1/2 cup melted butter
1/4 cup granulated sugar
1/4 cup cocoa powder
2 cups graham wafer crumbs
Filling:
1 lb cream cheese, softened
2/3 cup granulated sugar
3 eggs
1/2 cup Baileys
2 oz semi-sweet chocolate, melted

Prep. Time → 25 min

Cook Time → 55 min

1. 1. Preheat oven to 325F. For crust, combine butter, sugar and cocoa powder. Stir in crumbs. Press evenly over bottom and 1" up the sides of a 9" springform pan.
2. For filling, beat the cream cheese until smooth. Gradually beat in sugar. Beat in eggs, one at a time, at low speed. Blend in Baileys.
3. Pour about 1/3 of mixture into bowl and stir in melted chocolate until well blended. Pour half of the plain mixture into prepared crust. Drizzle with half the chocolate mixture. Repeat layers. Make a marbled design by gently swirling batter with a knife.
4. Bake at 325F for 50-55 minutes or just until set. Loosen cake from rim of pan. Cool on rack, then chill. Grarnish with fresh fruit if desired.
