2 teaspoons olive oil
1 diced medium onion
2 diced carrots
1 pound thinly sliced chicken breast
1 cup sliced mushrooms
2 diced celery stalks
2 minced garlic cloves
4 cups chicken broth
1 cup water
3/4 cup quinoa
1/4 teaspoon thyme
Salt and pepper to taste

Prep. Time → 10 min

Cook Time → 30 min

1. Saute onions and carrots in olive oil for 5 minutes.
Add chicken, mushrooms, celery, garlic and cook an additional 5 minutes.
Add broth, water, quinoa, thyme, salt and pepper. Bring to a boil, reduce heat and simmer for approximately 15 minutes; until quinoa is tender.
