Chipotle Bean Burritos of Michelle - Recipefy

Olive Oil
1 garlic clove, minced
1/2 teaspoon chile powder
1/4 teaspoon salt
1/3 cup water
1 15oz can black beans, rinsed and drained
1 15oz can kidney beans, rinsed and drained
3 tablespoons refrigerated fresh salsa
6 10-inch tortillas (flour, wheat, whatever works for you!)
1 cup shredded cheese (we use mozzarella, cheddar jack, whatever we have on hand)
1 1/2 cups chopped tomato
1 1/2 cups shredded lettuce
6 tablespoons thinly sliced green onions
Sour Cream

1. Heat large skillet over medium heat. Coat pan with oil.

2. Add garlic and cook for 1 minute stirring constantly.

3. Stir in chile powder and salt and cook for 30 seconds, stirring constantly.

4. Add 1/3 cup of water and the beans and bring to a boil.

5. Reduce heat and simmer for 10 minutes.

6. Remove from heat and stir in salsa.

7. Mash up some of the bean mixture with a fork (you can't go wrong here - make it as "whole bean" or "smashed bean" as you would like).

8. Warm the tortillas (we usually microwave a few at a time for about 10 seconds or so) and assemble the burritos (bean mixture, cheese, tomato, lettuce, onions, and sour cream).

9. Roll up and enjoy!!
