Chocolate Zuchinni Muffins of Cynthia Miller - Recipefy

1/2 Cup King Arthur White Whole Wheat Flour
1/4 Cup Coconut Flour
1/4 Cup Milled Flax Seeds
1 Cup Protein Plus Peanut Flour
1/2 Cup Date Sugar
1 T Baking Powder
1/4 t Salt
1/4 Cup Olive Oil
1/4 Cup Silk Unsweetened Coconut Milk
1 Cup Water
2 Large Eggs
1 1/2 Cups Grated Zucchini
1/2 Cup Mini Semi Sweet Chocolate Chips

Prep. Time → 10 min

Cook Time → 20 min

1. Preheat oven to 350.
Prepare 18 Muffins with paper and/or pan spray.

2. Add dry ingredients to a bowl and stir until well mixed.

3. Make a well in top of the dry ingredients and add the olive oil, coconut milk, water, eggs, grated zucchini and mini chocolate chips.

4. Stir until just mixed.

5. Divide batter into the prepared muffin tins. Bake for 20 Minutes.
