Clotted cream cake

2 medium eggs
225g caster sugar
1tsp vanilla or 1/2 pod
225g clotted cream
200g self-raising flour
pinch of salt

Cook Time → 45 min

1. Pre-heat oven to 180C
Whisk eggs and sugar until almost white
Stir in vanilla
Fold the cream into the egg mix
Sift flour and salt together.
Fold flour mix into egg mix with a metal spoon
Pour into a pre-lined and greased 20cm spring form tin.
Place in oven and check a knife comes out clean after 45 minutes. When it does, remove from oven and leave to cool.
