Connecticut Filets of Courtney Glantz - Recipefy

filets
salt and pepper
butter
olive oil

1. Make sure your filets are room temperature. Ours sat on the counter for about 2 hours prior to cooking.

2. Mix together good salt and pepper, a bit heavier on the pepper and season the steak on all sides.

3. Preheat a cast iron skillet to medium high heat. Melt the butter and olive oil. Sear the steaks for roughly 1-2 minutes on all sides.

4. Put the skillet in the hot oven for an additional 7-9 minutes for medium rare. Let the steaks rest for 5 minutes before enjoying.

5. Obviously, if you prefer medium, up the cooking time in the oven by a few minutes.
