Dom's mac and cheese
Recipe by12 oz Penne
4 cups CHEESE SAUCE (recipe follows)
2 oz Cheddar, grated (1/2 Cup)
2 oz Gruyere cheese, grated (1/2 Cup)
1/4 teaspoon chipotle chili powder
Prep. Time → 7 min
Cook Time → 30 min
1. Preheat the oven to 350° F
Butter or oil a 9 x 13 inch baking dish.
Cook the penne 2 minutes less than package directions. Rinse the pasta in cold water and set aside.
Combine the cooked pasta and the CHEESE SAUCE in a medium bowl and mix.
Scrape the pasta into the prepared baking dish. Sprinkle the top with the cheeses and then the chili powder.
Bake, uncovered, for 30 minutes.
Let the mac and cheese sit for at least 5 minutes before serving.
2. CHEESE SAUCE recipe:
1/4 Cup (1/2 Stick) unsalted Butter
1/3 Cup all-purpose flour
3 Cups Milk
14 oz (about 3 1/2 Cups) Semi Hard Cheese grated (White Cheddar or Provolone)
2 oz (1/2 Cup) Semi Soft Cheese grated (Mozzarella, Monterey Jack, Fontina, Havarti)
1/2 teaspoon kosher salt
1/4 teaspoon chipotle chili powder
1/4 teaspoon garlic powder
3. Melt the butter in a heavy-bottomed saucepan over medium heat and whisk in the flour. Continue whisking and cooking for 2 minutes.
Slowly add the milk, whisking constantly. Cook until the sauce thickens, about 10 minutes, stirring frequently. Remove from heat.
Add the salt, chili powder, garlic powder and all the grated cheeses. Stir until the cheeses is melted and all the ingredients are incorporated, about 3 minutes.
4. Side Note:
For a spicier dish, add more chipotle chili powder. Make sure you use CHIPOTLE CHILI POWDER, no other chili powder will suffice.
