Easy wonton soup
6 cups chicken broth low sodium
1 inch piece of fresh ginger (sliced) or use minced ginger
1 clove minced garlic
20 mini frozen wontons (Chicken Cilantro one's from Trader Joe's are good)
1 1/2 cups sliced mushrooms
4 baby bok choy sliced (or use spinach or both)
a big handful of carrot matchsticks
1 tbsp soy sauce
1 tsp sesame oil
green onion chopped
Any other veg you want
1. Bring chicken broth to a boil in a large pot.
2. Smash the sliced ginger with the side of a knife to bring out flavour and add to the pot with garlic, cover and cook 5 mins.
3. Add the bok choy, mushrooms and any other veg and partially cook 5 mins, then add frozen wontons and simmer 2 to 3 mins, until wontons are heated through.
4. Stir in soy sauce and sesame oil.
