Grilled Pomfret with herb stuffing of Rana Chakrabarti - Recipefy

1 whole pomfret cleaned and prepared for stuffing - 250 GM

Stuffing

Coriander - one small handful
Mint - one small handful
Chilly - two
Garlic - seven to eight small sized
Sugar - half teaspoon
Salt - to taste

Topping

Onion - one large
Tomato - one medium
Ginger - one teaspoon, finely chopped
Garlic - one teaspoon, finely chopped

Prep. Time → 20 min

Cook Time → 10 min

1. Prepare stuffing ( paste ) : Put all stuffing ingredients into a blender and blitz till it's a smooth paste

2. Add half a teaspoon of oil to the paste and mix till glossy

3. Stuff the paste into the pomfret generously

4. Lock in water : Prepare a non-stick frying pan with olive oil on high flame.

5. Sear the fish on both sides less than half a minute on both sides to lock the water in.
Press down the fish on all sides to preserve its shape.

6. Prepare topping : Oil a baking / grilling tray.

7. Transfer fish to baking tray.

8. Fry chopped chilly and ginger garlic in same pan , with a pinch of salt until it's aromatic

9. Put in onion and fry till light brown.

10. Smother topping onto fish in spoonfuls until the entire fish is covered.

11. Grill it in an over for 5-6 min at medium temperature ( 150-160 degrees centigrade )

12. Remove and serve hot.
