homemade jelly roll cake recipe

(for the cake batter:)
1/3 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup ground almonds
4 eggs, separated
3/4 cup granulated sugar
1 tsp vanilla extract
1/4 tsp almond extract

(for the filling:)
1 1/2 cups heavy cream
3 Tbsp confectioner sugar
1 tsp vanilla extract

(for the sauce:)
2 pts fresh strawberries, rinsed and hulled
6 Tbsp sugar
1 Tbsp fresh lemon juice
1 powdered sugar, for topping

Prep. Time → 15 min

Cook Time → 15 min

1. 1. Preheat oven to 375*. Then take a 17x11 Inch baking sheet, spray with non stick spray, and lay the bottom with parchment paper.

2. 2.In a bowl, stiff the four and baking powder.

3. 3.In a big bowl, add egg yolks, some of the sugar. Use a hand mixer and cream together.

4. 4. Add vanilla extract and almond extract; mix.

5. 5.Add in dry Ingredients and ground almonds; mix.

6. 6.In a another bowl, add egg whites and salt. whisk till nice and frosty.

7. 7.Start adding sugar, and mix till stiff peaks.

8. 8.Take some of the egg whites, and put in other bowl; mix. Then take the remaining and mix in.

9. 9.Pour on baking sheet. Spread to make even. Put in oven, 375* for 12 mins till lightly golden.

10. 10.Take a clean kitchen towel, and sprinkle the top with confectioner sugar.

11. 11.Take a butterknife, and run around edges. Take out of pan, and place on sugar kitchen towel: remove parchment paper.

12. 12. Take the end of towel, and end of cake and start rolling like a jelly roll. Put on wired rack, and let cool for an hour;

13. 13. In a bowl with the heavy cream, add sugar and vanilla. Whisk till nice stiff peaks with a hand mixer.

14. 14.Take a white platter near you, unwrap jelly roll and spread with whip cream inside. Leave 2 inch boarder on the ends.

15. 15.Roll it tight back up, but this time without the towel; put it seam side down on the white platter.

16. 16. Wrap with plastic wrap, and put in fridge for 2 hours.

17. 17.In a blender, add strawberries. Juice of lemon, and sugar. blend till nice and smooth.

18. 18.When jelly roll is done. Slice on a angal, and put on plate. Then take some of the strawberry sauce, and put it around the jelly roll on plate
