Lemon bread

80ml butter, at room temperature
375ml caster sugar
2 eggs
450ml self-raising flour
2ml salt
125ml milk
rind of 1 lemon
juice of 2 big juicy lemons

Prep. Time → 20 min

Cook Time → 45 min

1. Preheat oven to 180C. Prepare 25x10x5cm cake tin.

2. Beat butter, 250ml caster sugar and eggs together.

3. Sift self-raising flour and salt together. Sit into mixture.

4. Add milk to mixture and stir.

5. Add lemon rind and stir in.

6. bake for 45min or until done.

7. Mix the remaining 125ml caster sugar and lemon juice in a saucepan on medium heat till syrup forms.

8. When the loaf comes out of the oven prick it here and there with a fork.

9. Pour lemon juice syrup over bread slowly.

10. Let cool and then serve.
