Mandarin orange salad

½ cup sliced almonds 3 T. Sugar 1-2 heads green leaf lettuce 1 cup celery, chopped 2 whole green onions, chopped 1 (11 ounce) can Mandarin orange, drained Dressing
½ t. salt ¼ cup oil 1 T. Parsley (freshly chopped parsley is better) 2 T. sugar 2 T. vinegar 2 dashes Tabasco sauce Dash of pepper

1. In a small pan over medium heat, mix almonds and sugar together. Stir constantly until light brown. Remove from heat and continue stirring to prevent sticking together. Refrigerate when cool. Tear 1-2 heads of green leaf lettuce into bowl with celery and green onions Mix well and refrigerate. When ready to serve, toss salad with sugared almonds and Mandarin oranges. For dressing mix ingredients and store in refrigerator until ready to serve.
