Mocha Whoopie Pies of Forbidden - Recipefy

125g butter, softened
1 packed cup treacle sugar
1 large egg, at room temperature
2 cups cake flour
half cup cocoa powder
1 tsp baking powder
half tsp bicarbonate of soda
half tsp salt
1 and 3 quarters cup buttermilk
1 tsp vanilla essence

Filling
2 and a half cups icing sugar, sifted
100g butter, softened
2 heaped tsp strong coffee granules (paste)
quarter cup thick cream cheese
a little milk, if needed

Prep. Time → 30 min

Cook Time → 10 min

1. Preheat oven to 180C. Prepare 2 baking trays

2. Beat butter and sugar until light and fluffy, ass eggs and beat until combined

3. in a separate bowl, sift dry ingredients together. Stir dry ingredients, alternating with the buttermilk into the sugar mixture. Mix in the vanilla essence

4. Place portions on baking trays (5cm apart)

5. bake for 10min until edges appear firm. Allow to cool on baking tray for 5min.

6. Transfer to wire rack to cool completely.

7. Mocha filling:
Beat icing sugar and butter until crumbly.

8. Add the coffee paste and cream cheese

9. Beat slowly until combined.

10. Add a little milk if the filling is too thick

11. Make mocha sandwiches.
