Mutton Kosha of Dipika Mukherjee - Recipefy

500 gm of medium sized mutton pieces
4 large onion pastes
1 tbsp paste of raw papaya
2 tbsp chili-ginger-garlic paste
5 green chilies
50 gm of yogurt
1 tsp turmeric powder
1 tsp red chili powder
1 tsp black pepper powder
1 tsp cumin powder
1 tsp coriander powder
2 tsp salt
1 tsp sugar
4 tbsp tomato puree
2 bay leaves
2 dry red chili
5 green cardamoms
2 cloves
1 cinnamon stick
Pinch of mace powder
1 tsp garam masala
1 tsp ghee
100 gm mustard oil

Prep. Time → 30 min

Cook Time → 90 min

1. 1. To prepare mutton kosha, wash the pieces of mutton thoroughly under water.

2. 2. Take a large bowl add paste of papaya, yogurt, turmeric powder, red chili powder, sugar and 1 tsp mustard oil. Add all the mutton pieces and coat each pieces with the spices. For best results marinade the mutton for 4-6 hrs in refrigerator.

3. 3. Now take a large deep bottom pan and heat oil in it. Add sugar to bring a nice color in the gravy.

4. 4. Add bay leaf, cardamom, cinnamon, cloves, dried red chili, mace powder and black pepper powder. Wait till the spices crackle and leave a spicy aroma.

5. 5. Add the onion paste and saute it well tills leave the raw smell. Then add chili-ginger-garlic paste and do the same with it.

6. 6. Add tomato puree, cumin powder, coriander powder, red chili powder, green chilies and mix it with other spices.

7. 7. Pour the marinated mutton in the pan and mix it with spices.

8. 8. Now cook the mutton on low flame by adding a cup of hot water. Don’t add more water as the mutton will start releasing water from it.

9. 9. It would get cooked in 1 hour. After an hour check the mutton are cooked completely with the help of a spoon. Poke a spoon into a mutton piece, if it is cooked completely the piece will becomes buttery soft.

10. 10. Finally add 1 tsp ghee and garam masala and give it a final mix.

11. 11. Serve the mouth watering mutton kosha with basmati rice pulao or maida poori or laccha paratha.
