My thai green curry of Cheech Andrea Francesco Albanese - Recipefy

1 onion chopped
2 tablespoons green thai curry paste
4 chicken thigh deboned cut into strips
500ml Coconut milk
100g green beans
12 Thai Eggplant quartered or diced eggplant(cubed and stirfried to seal)
2 tablespoons fish sauce
lemon rind
2 tablespoons brown sugar or palm sugar
freshly chopped coriander

Steamed rice

Prep. Time → 20 min

Cook Time → 30 min

1. Heat up a tablespoon of peanut oil at a medium heat

2. add the onion and the thai curry paste

3. cook for two minutes or till fragant

4. Add the chicken and brown for a minute

5. add the coconut oil and bring to a boil

6. reduce the heat to a low medium heat and add the green beans and eggplant

7. Add the lemon rind and cook for about 20minutes till the chicken is tender and the sauce has thickened.

8. Add the fish sauce, sugar and chopped coriander, stir through and serve with steamed rice
