Naartjie-fridge tart

200g Marie-biscuits, smashed
150g butter, melted
25ml gelatine
225ml Rooibos tea
410g can naartjie or mandarins, drained (retain syrup)
12,5ml sugar
12.5ml maizina (a thickening agent)
397g can condensed milk (not sure it's available in all countries)
100ml lemon juice
250g cream cheese
125ml cream, whipped
5ml vanilla essence

1. Mix Marie biscuits and butter and stick to tart dish. Place in fridge.

2. Sprinkle gelatine over warm rooibos tea, let it sponge and grow brighter over heat.

3. Heat syrup in a saucepan. Make sugar and maizina into a paste with some water.

4. Add to syrup and cook till thick and transparent. Leave to cool.

5. Mix condensed milk with lemon juice till thick. Add to gelatine mix and add to cream cheese

6. Fold cream and vanilla essence in. Cover with thickened syrup carefully and place in fridge for a few hours
