No-Cook Cucumber Soup of jenn - Recipefy

2 lbs cucumbers (deseeding optional) - cut into chunks, about 6 cups worth
1/2 large onion (vidalia, sweet), chopped
1/2 jalapeno pepper, deseeded and minced
2 cloves garlic, minced
4 tbsp fresh herbs (oregano, mint, etc), minced
salt & pepper to taste
1/4 tsp paprika
optional: white wine vinegar

1. Add all ingredients to a bowl and mix. Add to a blender along with a cup of stock and 1/2 cup sour cream or greek yogurt. Blend. Refrigerate for 30 minutes.

2. Serve with a dollop of sour cream or yogurt, a shake of paprika, and a drizzle of olive oil.
