Oregano and Garlic Roasted Lamb of Forbidden - Recipefy

15ml dried oregano
1 head garlic, separated
30ml lemon rind, finely grated
80ml lemon juice
150ml olive oil
salt and freshly ground black pepper
1,2kg leg of lamb
1 kg baby potatoes

Prep. Time → 160 min

Cook Time → 40-75 min

1. Place oregano, garlic, lemon rind, lemon juice, 125ml olive oil, salt and pepper into non-metalic bowl and stir to combine.

2. (Place 30ml of oregano mixture into center of leg of lamb and secure with kitchen string. Pour remaining mixture over lamb and place in baking dish. Cover and refrigerate for 2 hours

3. Preheat oven to 180C. Heat large non-stick frying pan over high heat with remaining oil and cook leg of lamb until browned, about 2 min each side.

4. Place potatoes in baking dish and toss to combine. Add lamb and roast until cooked to your liking. About 50-60min for medium
