Pea and ham soup of Ryan 'Paddy' Kernaghan - Recipefy

Olive Oil
Knob of Butter
1 Onion
2 Carrots
2 Celery Sticks
8 Pieces of unsmoked Bacon
1 Garlic Clove
900g frozen Peas
750ml Veg Stock
4 Bayleaves
Single Cream
Fresh Parsley
Ground Black Pepper

Prep. Time → 5 min

Cook Time → 55 min

1. Heat Oil & Butter in pan

2. Add 1 chopped onion, 2 carrots, 2 celery, 5 bacon (cut into pieces) and 1 crushed garlic clove

3. Cover and cook for 10 mins on low heat

4. Add 900g of frozen peas, 750ml of veg stock and 4 bayleaves, (season)

5. Cover and simmer for about 45 mins

6. Remove from heat and i personally used a hand processor to pulse to a thick purée whilst pouring in a little single cream and chopped fresh parsley.

7. Cut 3 bacon into pieces and quickly fry and add to the soup and serve.
