Roasted Beet & Feta Gratin with Mint of jenn - Recipefy

3 two-and-a-half to three inch diameter red beets, trimmed and scrubbed
3/4 cup heavy whipping cream
2 fresh mint sprigs plus 1 1/2 tbs for garnish
1 garlic clove, peeled and smashed
1/2 cup crumbled feta

Prep. Time → 35 min

Cook Time → 2 hr 20 min

1. Preheat oven to 400F

2. Place beets in a small baking dish, add enough water to reach 1/4" depth. Sprinkle with salt & pepper. Cover tightly with foil. Bake until beets are tender, ~50min.

3. Uncover beets and cool. Peel beets, cut into 1/4" thick slices. Cover and chill.

4. Preheat oven to 425F.

5. Bring cream, mint & garlic to a boil in a saucepan. Remove from heat, cover, steep for 15min.

6. Butter a 1.5quart gratin dish or shallow baking dish. Arrange beets in even layers in the dish, sprinkling each layer with salt.

7. Strain cream mixture over beets. Sprinkle feta over.

8. Bake until cream is bubbling at edges and feta is browned in spots, 20min.

9. Sprinkle pepper and mint over, let stand 5 min before serving.
