Sago pudding of Forbidden - Recipefy

2 liters milk
250ml sugar
pinch of salt
5 pieces stick cinnamon
500g sago, soaked in water overnight (I don't know if this is available in other countries and quite frankly I have no idea what it is myself. I don't eat this particular dessert since I am allergic to corn)
grated rind of 1 orange and 1 lemon
15ml cornflour
10ml vanilla essence
10 eggs, separated
custard to serve

Prep. Time → 15-20 min

Cook Time → 40 min

1. preheat oven grill and grease a large ovenproof dish with butter

2. bring milk, sugar, salt and cinnamon to the boil in a large saucepan. Add the soaked sago to the milk mixture along with the orange and lemon rind. Bring to the boil and simmer for about 20min or until the sago is soft

3. mix the cornflour with a little water in a mug to form a paste and stir into the sago mixture. Bring to the boil once more then remove from the heat. Stir in the essence.

4. whisk the egg yolks in a medium bowl and add to the sago mixture. Remove the cinnamon

5. In a separate bowl beat the egg whites until stiff and fold in the mixture

6. pour into the prepared dish and place under the grill until golden brown on top

7. serve with custand
