Salmon with linguine and water cress

1 Pack of Linguine
3-4 Salmon Portions
Bag of Watercress (Handful per plate!)
1 Tbsp Pesto
3 Spring Onions
8 mini Plum Tomatoes
6 Tbsp Basil Infused Olive Oil (Or Olive Oil)
50g Pine Nuts
Parmesan to taste

Prep. Time → 5 min

Cook Time → 12 min

1. Put pan of water on to boil (or kettle)
Rinse watercress and place on plates
Cut tomatoes in half and place over the watercress
Place water and pasta in the pan to cook.
Fry Salmon Skin Side Down in Olive Oil, Remove skin once salmon half cooked.
Turn salmon
Add chopped Spring Onions to salmon
Dry Fry Pine Nuts until toasted golden brown
Drain cooked Pasta and add Pesto
Add Salmon Mix to pasta and toss, adding a little extra oil if required.
Place Pasta mix onto the top of the watercress and tomatoes
Sprinkle pine nuts and sprinkle with grated Parmesan.
