Scones, dried cherry

2 cups flour
3 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoons salt
1/2 cup dried cherries

6 tablespoons vegetable shortening
1/3 cup half-and-half
3 tablespoons orange juice
one egg

Prep. Time → 10 min

Cook Time → 15 min

1. mixed dried cherries and orange juice, set aside 10 min.

2. mix first four ingredients and vegetable shortening, with pastry blender till mixture resembles coarse crumbs. Create a well in the center of the dry ingredients.

3. Hand beat egg and half-and-half. Add cherry - juice mix. Pour wet ingredients into the dry ingredients well. Use a fork to stir until moistened.

4. Turn dough onto lightly floured surface. Knead 12 to 15 strokes. Form into a 7 inch circle, approx. 1-1/2 inch deep; brush top of scone with half and half and sprinkle with sugar

5. Cut into eight wedges. Place 1 inch apart on un-greased baking sheet.

6. Bake in a 400° oven for 12 to 15 min. Cool on a wire rack for 5 min. Serve warm.

7. ***First four ingredients can be made into a mix to give as a gift.{ You can add the dried cherries to gift , but keep separate in a small ziploc bag}. In an air tight container, can be stored for six weeks; in the freezer can be stored for six months.
