Stuffed Tomato Snacks of Amy Jessup - Recipefy

1 cup low fat cottage cheese
4 tomatoes, halved and pulp removed
1 cucumber, peeled, and shredded
4 teaspoons almonds, chopped

1. Cut tomatoes in half, cut out the insides to create a tomato shell. Sprinkle inside of tomato shells with salt and pepper. Dice tomato pulp into small chunks. In mixing bowl, combine cottage cheese, diced tomato chunks, shredded cucumber and almonds. Stuff mixture into tomato shell. Chill before serving.

3. These are about a block a piece, eat them as a snack, or eat 3 or 4 for a meal.
