White Chicken Chili of Kimesha Williams - Recipefy

1 lb. boneless, skinless chicken breast
1 (16 oz) can diced tomatoes (I use fire roasted)
3 (16 oz) cans beans
2 medium onions, diced
6 gloves of garlic, pressed
1 tbsp extra virgin olive oil
1/4 cup chili powder
1 tsp of coriander
4 cups reduced sodium chicken broth
1 cup 2% cheddar cheese, grated
3 small zucchinis, shredded
Salt and pepper to taste

Prep. Time → 20 min

Cook Time → 60 min

1. Saute' all veggies together, along with one cup of chicken broth.

2. In a separate pan, cook chicken with the 5 cloves of Garlic and 1 tsp of coriander, and 1/4 tsp of chili powder. May add salt and pepper to taste.

3. When the veggies are soft, add in the un-drained tomatoes, and the rest of the chicken broth

4. Cook on medium heat and bring to a gentle boil.

5. Dice the chicken and add to the pot.

6. Drain and rinse the beans and add to the pot

7. Cook for 30 minutes until the beans are tender

8. Just before serving, add in 1 cup of cheese and stir
