Yard-long beans with peanuts

1 1/2 Tbs peanut oil
1 Tbs chopped garlic
1/2 cup onion, thinly sliced
2 chiles - hot, chopped
1 1/2 lb yard-long beans
2 tsp soy sauce
1/2 cup dry-roasted peanuts
2 Tbs fresh lime juice
Garnish - lime wedges

Prep. Time → 5 min

Cook Time → 10 min

1. 1. Trim the stem end of the beans off, and cut into 4 inch lengths.

2. 2. Grind peanuts until about half of peanuts are finely ground and remainder are in very large pieces.

3. 3. Heat wok over high heat until a bead of water dropped onto cooking surface evaporates immediately. Add oil, swirling to coat wok, then add garlic, onion, and chile, stir-fry until garlic begins to turn pale golden, about 5 seconds.

4. 4. Add beans, and stir-fry until hot and well coated, about 2 minutes. Add soy sauce and turn down the heat and cover pan.

5. 5. Cook this for about 5 minutes covered - maybe a little more, depending on the beans. They can take a bit of cooking and still remain crispy.

6. 6. Drizzle in lime juice and season with salt, then transfer to a bowl. Serve warm or at room temperature.
